I just realized I haven't posted in almost 2 weeks. If it doesn't rain tomorrow, I'm going to take some pictures of our new place out in NC for everyone to see. My sister-in-law was here for the last week so things were thrown a little bit off in general.
In the meantime, does anyone have a preferred mp3 organizer? I'm going to give iTunes a chance to just organize the files in folders, but methinks it is not going to organize it the way I wants it to. :)

I would advise you to stay away from letting iTunes organize your files. I have no real reason other than not trusting it.
Check out winamp 5. I hear it has a good interface for organizing. Not sure if it rearranges files though. Let me know if it does, this could be a good app to develop!
